In contrast of the way the last two weeks were (colds, a few professional setbacks, lunch that ended up on the floor and other little mishaps), this weekend was just what we (I) needed. The rain finally stopped on Friday afternoon and we immediately took advantage of that and headed out to the puddles. I changed Lev twice that day but he was having so much fun, I just didn’t have it in me to not let him jump to his heart’s content. We collected some leaves for a potential DIY and colored them. I didn’t really press them beforehand like I was supposed to so we’ll have to see what we can use them for. But we did have fun coloring them 🙂
Lev did end up with quite a cold though, which has been brewing since Wednesday so the weekend was a little up and down for him. He felt good during the day but coughed and tossed at night so understandably there were moments during the day when he was a little tired.
Vid had a match on Saturday evening so he left early, while the three of us headed to a park by the beach in the afternoon. I used to go there a lot with Lara but Lev hasn’t been yet and since it was really nice and sunny we decided to rectify that. They both absolutely love it and we ended up staying way longer. By the time we left it was magic hour and the light was just so unbearably beautiful. We stopped at an observation area to look at the flamingos, which is what this area is sort of known for. It was so nice and Lara was totally in awe. I tried taking some photos but I didn’t have the big “paparazzo)” lens with me and they were a little too far to be truly appreciated. So we just watched them for a little bit before heading home.

Later in the evening I also made pumpkin pie! But with a coconut twist! I had a serious craving for it but by the time I finished it was already 10 PM and it needed to be refrigerated for a few hours so I couldn’t really have it. The recipe is so simple with very few ingredients but oh so delish!
On Sunday morning, I also had my 10K run in Montpellier. I missed out on this last year because I didn’t sign up on time so I’m really happy I got to do it this year. My little tribe came with me too for support and I manged to run it in 56 minutes. I tried pushing for 55 but I was a little worried because I really struggled with my pace at about 7.5KM so I decided to just try and keep up with what I was doing and push in the end if I’m able to. I only hope that I’ll be ready enough for the 21K in two weeks. Cross your fingers folks.
In the afternoon we went to visit some friends and had crepes, which was so much fun. Basically my post run meal included a roast, pumpkin pie and about a gazillion crepes. Ooops 🙂
Pumpkin pie with a coconut twist recipe:
- 400g of pumpkin puree. See here how to make your own.
- 200 ml organic coconut cream
- 1/2 cup of raw coconut sugar
- 1 tbs of organic brown sugar
- 2 eggs
- vanilla extract
- My favorite and easiest whole wheat pie crust recipe. This time though, I bought organic pastry dough at the store and used that.
Combine and blend all the ingredients for the filling then pour into the pie crust. I didn’t blind bake the pie shell before. Bake at 190°C (375°F) for about 50 minutes. It may seem like the pie is still gooey a little underneath, which is why refrigeration is key. Let cool and then refrigerate overnight. Enjoy!
