And a Wednesday that felt like a Sunday after a really, really tiring weekend.
We traveled back to Montpellier bright and early yesterday morning. Like 4.30 AM early. I slept really badly AGAIN and probably got about 3 hours in. The kids were obviously very tired too so naturally the first part of our trip involving crossing airport security, boarding the plane and so on and so forth was crazy. So crazy in fact that Lev almost got X-rayed at security because there was no way to keep him next to me but to pick him up and put him on the lane while I took out all the electronic devices, liquids etc.
HE’S SO DARN CUTE AND FULL OF MISCHIEF. DEFINITELY KEEPING ME ON MY TOES. ALSO, HOW ARE YOU LIKING THIS BOWL HAIRCUT I GAVE HIM A FEW WEEKS AGO?
I was constantly in between either screaming or laughing hysterically. I just kept telling myself, this is a test, this a test, this is a test of your will power and nerves. Keep calm, keep calm. Thankfully the plane ride is short and the seat in front of Lev was empty because otherwise the person sitting there would have serious back pain today. By the time we landed, things were a little easier and we got our bags without another case of Lev “The Fugitive Toddler”. And of course by the time we drove out of the airport parking lot both of them were sound asleep and remained that way all the way to Montpellier. Still, not one of our finest travel days, that’s for sure…
I was so happy to get home but that’s when my own exhaustion kicked in. I had no desire to go back out but we did have to do something so Lara suggested we make muffins. She loves muffins! And even though it’s November now, I still have a stock of canned pumpkin so pumpkin muffins it was. We washed up and got started, Lara cracking the egg and measuring the flour, Lev whisking and making a mess while doing it. But we had so much fun and it also eased off my guilt since we basically lazed around until it was bedtime. At 7PM!!! The muffins turned out great, perfect for breakfast and afternoon snack food.

Oh, and a final thought for the French school system, starting and ending the holidays in the middle of the week is odd and officially messes everything up. I’ve already had to remind myself about 20 times today that it’s Thursday, not Monday!
Pumpkin Muffins (adapted from this recipe)
- 1 can of pumpkin puree (or make your own)
- 1 3/4 cups organic all-purpose flour
- 1 cup coconut sugar
- 1/2 cup melted coconut oil
- 2 tsp. baking soda
- 3 tsp cinnamon
- 1 tsp nutmeg
- 1 egg
- 1 tsp vanilla extract
- chocolate chips
- pinch of salt
Pre-heat your oven to 190°C (375°F) .Mix together all the dry ingredients. In a separate bowl whisk together all the wet ingredients and mix in with the dry ingredients slowly. Finally add the chocolate chips. Distribute the batter into 12 muffin cups about 3/4 full and Give the bowl to your kids, they will happily lick it clean. Bake the muffins for 20 minutes and voilà!
